I would venture a guess to say because lemon's are expensive and to make a full thing of lemon juice it would take a lot of lemons, but cleaning products are trying to use the natural characteristics of lemons not just the taste so they need to use the real thing. that's a REALLY good question...
they prolly use a lot of artificial ingredients in lemon juice to help preserve it, and in the dish liquid it's used as a selling point.
I have never seen lemon juice that was not 100% lemon juice. Real lemon juice breaks up grease and so that's why its used in dish washing liquid.
